Vegan rice pudding à la Sticky Rice

Hands up. Who loves rice pudding? And who loves sticky rice with mango ?! I promise you, if your hands are up now, then you are guaranteed to love this recipe! Because it combines the classic German milk rice with the tropical aromas of sticky rice.

By the way: This recipe is not only 100% vegan, but also a wonderful way to recycle leftovers if you have cooked too much rice again.

Vegan rice pudding Tropical Edition: Sticky rice with mango

So that you can dream spoon by spoon of your past or future vacation at the next breakfast, I share with you one of my absolute favorite dishes (#SharingIsCaring).

Ingredients

  • 300 - 400 g of cooked rice
  • 1 can of coconut cream, unsweetened
  • 1 ripe mango
  • 3 tbsp macadamias
  • 2 tsp honey
  • 2 tbsp orange juice
  • Sea salt flakes
  • 1/2 tsp cinnamon

Instructions:

  1. Heat the cooked rice with the coconut cream in a saucepan over medium heat. Tip: If you have no rice leftovers, you can simply cook the rice according to the package instructions and add the coconut cream shortly before it is ready.
  2. Stir the rice over and over and sweeten with 1 tsp honey.
  3. When the rice is warm enough, remove the rice from the heat and season with cinnamon.
  4. Peel and dice the mango.
  5. Roast the macadamia nuts in a small pan without fat.
  6. Then add the honey and let it caramelize slightly. Deglaze with orange juice.
  7. Swirl the macadamia nuts in the honey-orange caramel until the liquid in the juice has evaporated.
  8. If you want, you can add a few flakes of salt to the macadamia nuts.
  9. Arrange the milk rice in a bowl. Garnish with mango and caramelized macadamias.
