Lunch breaks are made to enjoy vegan cucumber salad with passionfruit & mint dressing. I am the worst when it comes to preparing lunch for myself. Most of the time I completely forget about lunch at all (and always get in trouble for that đ) But when I am working, I don’t realise how quickly time goes by and I won’t take any break at all unless someone forces me too. But with this vegan cucumber salad with passion fruit & mint dressing waiting in my fridge, even I take a break for lunch. It is just too good not to eat đ
Quick Lunch Idea: Vegan Cucumber Salad with passionfruit & mint dressing
Ingredients (makes 3-4 servings):
- 4 Lebanese cucumbers
- 2 passionfruit
- 1/2 lime juice
- 5 tbsp olive oil
- 1 tsp agave sirup
- 2-3 branches mint, freshly chopped
- Salt & pepper
Instructions:
- With a mandolin or a vegetable peeler slice the cucumber lengthways into thin ribbons.
- For the mint salad dressing combine lime juice, olive oil, agave sirup, 1 passionfruit, chopped mint. Season with salt and pepper.
- Add the salad dressing to the cucumber ribbons and mix well.
- Garnish with passion fruit.
