Banana Bread Sundaes

Those who like to eat banana bread will love these little banana bread sundaes. Most of you are familiar with banana bread. But have you ever tried banana bread sundaes ?!

Banana bread sundaes – What is that?!

Banana Bread Sundaes ?! What is that supposed to be?! Sundaes are simply an ice cream dessert with various toppings such as fruits, pieces of cake, sprinkles, nuts, etc.

The combination of vanilla ice cream and the banana bread muffins is just too delicious and turns the little cakes into a delicious dessert in no time at all.

The ultimate banana bread muffins: soft, velvety and juicy

I’m not reinventing the wheel with this recipe, but I’ve tried one or the other banana bread recipe, replaced ingredients with others and tinkered with the recipe until I got my absolute and, for me, perfect result. And of course I don’t want to withhold that from you; in my opinion, banana bread has to be super soft, super fluffy and super juicy. And of course also taste like banana. And if you see it that way, then you’ve come to the right place: For my banana bread muffins, by the way, I replaced the normal sugar with maple syrup and brown sugar. That gives a nice, caramel-like aroma. I also left out some of the flour and used ground almonds instead.

Of course, you don’t have to bake muffins, you can also use a box or round cake pan. Personally, I prefer the muffins. First, the baking time is shorter. Second, they stay fresh longer because there is no cut like a large cake. And thirdly, the small banana bread muffins can be frozen wonderfully and in portions!

Ingredients (makes about 12 banana bread sundaes):

  • 115 g butter, soft
  • 100 g of brown sugar
  • 5 tbsp maple syrup
  • 2 organic eggs
  • 4 very ripe bananas, mashed
  • 1 ripe banana, sliced
  • 120 g flour, universal or whole wheat flour
  • 50 g ground walnuts or almonds
  • 1 teaspoon Baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • For the banana bread sundae: vanilla ice cream, chopped walnuts, honey or maple syrup as a garnish

Instructions:

  1. Preheat the oven to 160 ° C top / bottom heat.
  2. Beat eggs with sugar, vanilla and maple syrup with a hand mixer until frothy.
  3. Then alternately add the mashed bananas and the softened butter to the egg-sugar mixture in portions. Mix until the bananas and butter are evenly distributed.
  4. Add flour, ground almonds, baking powder and salt spoon by spoon and mix well with a hand mixer.
  5. Grease the muffin tins with a little butter or oil.
  6. Pour the batter into the muffin tins. Only put enough dough into the mold that there is still some space. The banana bread muffins rise while baking.
  7. Cut the leftover banana into 12 slices. Put a banana slice on the dough.
  8. Bake the banana bread muffins for about 15 to 20 minutes on the middle rack until they are golden yellow. Tip: do a stick test to see if the muffins are done.
  9. For the sundae: If you want, you can garnish the banana bread muffins with vanilla ice cream, chopped nuts and maple syrup or honey.

PS: Banana bread is a perfect waste disposer – especially for bananas that are too ripe.

Tip: Replace some of the flour with heat-resistant protein powder or ground nuts. This gives your banana bread an extra helping of protein and makes it more valuable. By the way: do you already know my apple protein bread ?!

Bananenbrot-Sundaes

Ingredients
  

  • 115 g Butter weich
  • 100 g brauner Zucker
  • 5 EL Ahornsirup
  • 2 Bio-Eier
  • 4 sehr reife Bananen zerdrückt
  • 1 reife Banane in Scheiben
  • 120 g Mehl universal oder Vollkornmehl
  • 50 g gemahlene Mandeln
  • 1 TL Backpulver
  • 1/2 TL Salz
  • 1/2 TL Vanille
  • Vanilleeis, gehackte Walnüsse, Honig oder Ahornsirup als Garnitur optional

Instructions
 

  • Den Ofen auf 160° C Ober-/ Unterhitze vorheizen.
  • Eier mit Zucker, Vanille und Ahornsirup mit einem Handmixer schaumig schlagen.
  • Dann abwechselnd die zerdrückten Bananen und die weiche Butter portionsweise zu der Ei-Zucker-Mischung hinzufügen. Solange mixen bis die Bananen und Butter gleichmäßig verteilt sind.
  • Mehl, gemahlene Mandeln, Backpulver und Salz löffelweise hinzufügen und mit dem Handmixer gut verrühren.
  • Muffinformen mit etwas Butter oder Öl ausfetten.
  • Den Teig in die Muffinformen füllen. Gebt nur soviel Teig in die Form, dass noch etwas Platz ist. Die Bananenbrot-Muffins gehen beim Backen auf.
  • Gebt je eine Bananenscheibe auf den Teig. Die Bananenbrot-Muffins für circa 15 bis 20 Minuten auf mittlerer Schiene backen, bis sie goldgelb sind. Tipp: Stäbchenprobe machen, um zu testen, ob die Muffins fertig gebacken sind.
  • Die übrig gebliebene Banane in 12 Scheiben schneiden.
  • Optional: Mit Vanilleeis, gehackten Walnüssen, Honig oder Ahornsirup garnieren.
