What do pulled beef and my wedding have in common ?! Quite simply because it was one of the dishes that was served at my wedding. Pulled Beef - The Wedding Edition, so to speak 😉 But that's not all - I actually cooked it myself for my wedding. As if it wasn't enough for our wedding to coincide with the current corona pandemic #PerfectTiming, our caterer also jumped off. And so I faced the challenge of cooking the food for my own wedding. But I'll tell you this story another time. Back to the pulled beef.

Partyfood: Juicy Pulled Beef with Tortillas

Long story short: This dish is absolutely disaster-tested and a great solution if you want to take care of many mouths at once. Because it cooks almost by itself, can be combined in many different ways and even tastes cold. So whether you are planning a garden party, a birthday bash or a DIY wedding - I can only recommend this pulled beef.

Ingredients (for 4 - 6 people)

  • 700 g beef e.g. shoulder
  • 2 tbsp canola oil for frying
  • 3 carrots
  • 1 tomato
  • 3 medium onions
  • 300 ml beer
  • 3 tsp paprika powder ground, sweet or smoked
  • 1 tsp cayenne pepper ground
  • 5 tbsp tomato ketchup or BBQ ketchup
  • 3 tbsp maple syrup or honey
  • 5 gloves of garlic
  • ground salt and peper
  • Greek yogurt
  • Olive oil
  • 1/2 cucumber
  • Corn tortillas, bought or home made
  • 1/2 organic lemon, juice and zest

Instructions:

  1. Preheat the oven to 120 ° C top and bottom heat.
  2. Sear the shoulder on all sides in a roaster with a little canola oil.
  3. Meanwhile, clean the onion, carrots, tomato and cloves of garlic and cut them into large pieces.
  4. When the shoulder is seared on all sides, add the vegetables and let them sauté briefly. 
  5. Then add the spices and deglaze everything with beer. Cover and simmer for 5 minutes. Then lower the temperature.
  6. Now put the shoulder covered in the oven and let it simmer for at least 6 hours. Tip: Make sure that there is always enough liquid in the roaster. Add water if necessary.
  7. Then take the shoulder out of the juice and carefully tear the meat into pieces with two forks.
  8. Press the juice through a strainer. Then put the meat back in the juice and mix well.
  9. Whisk the Greek yogurt a little so it becomes nice and creamy. 
  10. Season the yogurt with a little salt and pepper, lemon juice, zest and olive oil.
  11. Wash the cucumber and dice finely. If you want, you can remove the core housing.
  12. Put some pulled beef on a corn tortilla and garnish with some yogurt and cucumber cubes.

Ingredients
  

Pulled Beef

  • 5 tbsp tomato ketchup or BBQ ketchup
  • 3 tbsp maple syrup or honey
  • 5 gloves of garlic
  • salt and peper ground

Topping

  • Greek yogurt
  • Olive oil
  • 1/2 cucumber
  • 1/2 organic lemon juice & zest

Notes

The pulled beef can also be prepared on the stove or grill in a saucepan with a lid or in an electric pan with a lid.
