Brownies a la Black Forest Cake. This recipe is almost like a walk on memory lane to me. Why are you wondering? Well, anyone who has been following me in recent years will surely remember that I took part in the fifth season of “The Taste” in 2017 and that the Black Forest Cake made me leave the show.

So much has happened since then and than the request from EP: Austria came if I didn't want to think about a recipe for this year's Black Friday in collaboration with KitchenAid, the Black Forest cake shot through my head. And right after that came the question: Do I ever want to make a Black Forest Cake again ?!

YES, I DO 🙂 I will face my “Black Forest Cake Trauma” and create a new memory. Said and done. And I can tell you: it has become such a delicious new memory. And the Black Forest Cake will be removed from the black list again.

But back to the actual topic: In the United States, Black Friday, the Friday after Thanksgiving, is the official starting signal for Christmas shopping. And I can tell you from my own experience: It is absolutely crazy and wonderful at the same time (especially for a self-confessed Shopaholic.) And after experiencing these shopping-crazy crowds in New York myself, I immediately sign the theory that the name Black Friday has its origin in the fact that the masses of cars and people were just like something black 😉

Another theory about the origin of the name is, moreover, that the sellers got black fingers from counting money or that they wrote in the blacks instead of in the reds through the sales.

But no matter where the name Black Friday comes from, you can still sweeten your day with my brownies a la Black Forest Cake. After all, for such a shopping marathon you also need a sound base 😉

How to: Black F(orest)riday Brownies

Brownies Schwarzwälderkirsch Black Friday

Ingredients

  • 6 eggs
  • 150 g caster sugar
  • 150 g brown sugar
  • 300 g dark baking chocolate,
  • 250 g melted Butter
  • 4 tablespoons of vegetable oil sunflower or canola
  • 140 g plain flour 
  • 1 tsp of baking soda
  • 100 g raw cocoa powder
  • 1 glass of cherries with juice
  • 125 ml whipped cream
  • 1/2 cup sour cream 
  • A little cherry schnapps or rum (optional)

Instructions:

  1. Preheat the oven to 160 ° C top and bottom heat.
  2. Melt 250 g chocolate and butter in a water bath. Finally add the vegetable oil and let it cool slightly.
  3. In the meantime, beat the eggs and sugar until frothy using a food processor until the volume has doubled and the mass has become light and fluffy.
  4. Gradually add the melted chocolate and butter mixture and stir in.
  5. Mix the flour, baking powder and cocoa and add to the mixture in spoons.
  6. Separate the cherry juice from the cherries. Boil down the juice (with kirsch or rum) until it is syrupy and thickened. Set aside to cool.
  7. Place the dough in a deep baking sheet lined with baking paper and spread evenly.
  8. Spread the 3/4 of the cherries on the dough and press gently into the batter.
  9. Then roughly chop half of the remaining chocolate and also spread over the dough and press in gently.
  10. Bake the brownies for about 20 minutes. If the brownies are still a bit “chewy” on the inside, but the crust is already slightly leaved, they are done.
  11. Let the brownies cool slightly.
  12. For the topping, whip up the cream and carefully fold in the sour cream.
  13. Grate the rest of the chocolate.
  14. Spread the whipped cream and sour cream mixture on the brownies and spread the remaining cherries, chocolate rasps and the cherry syrup over them. Finally cut everything into pieces of the same size.

Ingredients
  

Brownies:

  • eggs Bio
  • 150  g sugar  weiß
  • 150 g sugar braun
  • 300 g Kochschokolade dark
  • 250  g butter melted
  • tbsp Pflanzenöl Sonnenblume oder Raps
  • 140  g flour  universal
  • tsp baking powder
  • 100  g Backkakao
  • 1 Glas Kirschen im eigenen Saft

Topping

  • 1 cup Schlagobers
  • 1/2 cup Sauerrahm
  • Kirschwasser oder Rum at will
  • 4 tbsp Kirschsaft

Instructions
 

Für die Brownies

  • Preheat the oven to 160 ° C top and bottom heat.
  • 250 g Schokolade und Butter im Wasserbad schmelzen. Das Pflanzenöl zum Schluss hinzufügen und alles leicht abkühlen lassen.
  • In the meantime, beat the eggs and sugar until frothy using a food processor until the volume has doubled and the mass has become light and fluffy.
  • Gradually add the melted chocolate and butter mixture and stir in.
  • Mix the flour, baking powder and cocoa and add to the mixture in spoons.

  • 3/4 der Kirschen auf dem Teig verteilen und leicht in die Masse drücken.
  • Den Kirschsaft von den Kirschen trennen. Den Kirschsaft aufbewahren.
  • Die Hälfte der restlichen Schokolade grob hacken und ebenfalls über dem Teig verteilen und leicht eindrücken.
  • Die Brownies für circa 20 Minuten backen. Sie sollen innen noch etwas „chewy“ sein, aber die Kruste ist schon leicht blättrig.
  • Let the brownies cool slightly.

Für das Topping

  • Den Saft (mit Kirschwasser oder Rum) einkochen bis er sirupartig und eingedickt ist. Zum Abkühlen beiseite stellen.
  • Schlagobers aufschlagen und den Sauerrahm vorsichtig unterheben.
  • Grate the rest of the chocolate.
  • Die Schlagobers-Sauerrahm-Mischung auf den Brownies verstreichen. Dann die restlichen Kirschen, Schokolade-Raspeln sowie den Kirschsirup darüber verteilen. Zuletzt alles in gleich große Stücke schneiden.
