Those who like to eat banana bread will love these small banana bread sundaes. Most of you know banana bread. But have you ever tried banana bread sundaes ?!

Banana Bread Sundaes ?!

Banana Bread Sundaes ?! What is that supposed to be?! Sundaes simply is an ice cream dessert with various toppings such as fruits, pieces of cake, sprinkles, nuts etc.

The combination of vanilla ice cream and the banana bread muffins is just too delicious and quickly turns the little cakes into a delicious dessert.

The ultimate banana bread muffins: soft, velvety and moist

I do not reinvent the wheel with this recipe, but I have already tried one or the other banana bread recipe, replaced ingredients with others and tweaked the recipe until I got my absolute and perfect result. And of course I don't want to withhold that from you: in my opinion banana bread has to be super soft, super fluffy and super juicy. And of course taste like banana too. And if you see it that way, then you've come to the right place with me: For my banana bread muffins, I've replaced the normal sugar with maple syrup and brown sugar. It gives a nice, caramel aroma. I also left out some of the flour and used ground almonds instead.

You don't have to bake muffins, of course, but you can also use a regular cake form. I personally prefer the muffins. First, the baking time is shorter. Second, they stay fresh longer. And thirdly, the small banana bread muffins can be wonderfully frozen in portions!

Ingredients (makes 12 muffins):

  • 115 g butter, softened
  • 100 g brown sugar
  • 5 tbsp maple syrup
  • 2 free roaming eggs
  • 4 very ripe bananas
  • 1 ripe banana, cut in slices
  • 120 g flour (plain or wholemeal, no self-raising flour)
  • 50 g ground walnuts or almonds
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • For the banana bread sundae: vanilla ice cream, chopped walnuts, honey or maple syrup as a garnish

Instructions:

  1. Preheat the oven to 160 ° C top and bottom heat.
  2. Beat the eggs with sugar, vanilla and maple syrup until fluffy with a hand mixer.
  3. Then alternately add the mashed bananas and the soft butter in portions to the egg-sugar mixture. Mix until the bananas and butter are evenly blended in.
  4. Add flour, ground almonds, baking powder and salt in spoons and stir well with the hand mixer.
  5. Grease the muffin tins with a little butter or oil.
  6. Fill the dough into the muffin tins. Put only enough dough into the form that there is still some space. The banana bread muffins rise when baked.
  7. Cut the remaining banana into 12 slices. Put a slice of banana on each muffin.
  8. Bake the banana bread muffins on the middle rack for about 15 to 20 minutes until they are golden. Tip: make a stick test to test whether the muffins are ready.
  9. If you want, you can garnish the banana bread muffins with vanilla ice cream, chopped nuts and maple syrup or honey.

PS: Banana bread is perfect to use up leftovers - like too ripe bananas.

Tip: replace some of the flour with heat-resistant protein powder or ground nuts. This gives your banana bread an extra portion of protein and higher nutritional value. By the way: do you already know my apple protein bread?!
