Bananen-Müsliriegel Banana Muesli Bar

Were you so happy when you found a banana-chocolate cereal bar in your lunch box ?! For me it was a highlight that was far too rare 😅😅 Today - a bit more mature and wise - I know of course that this cereal bar contained no banana at all, but therefore a lot of sugar. And from today's point of view that also explains the rare occurrence in my breakfast or lunch box. There has to be healthier alternative, I thought. And that's why I went to my experimental kitchen and worked on a recipe for a healthier banana muesli bar. Said. Done. The result is these super delicious, vegan banana muesli bars. PS: They are not only vegan, but also free from refined sugar.

Banana Muesli Bars: A Healthy In-Between-Snack

Who does not know that: it has to be quick in the morning or that hunger that comes up in between ?! Then you can grab these vegan banana muesli bars without regrets. They contain little natural sugar, but healthy fats and nutritious carbohydrates that fill you up for a long time and give your mind the necessary energy. PS: They are also an excellent source of energy before an extensive training session.

Tip: You don't need a scale for this recipe. Simply use a medium-sized cup or a tea- and tablespoon to measure the ingredients.

Pop Up Girl’s eco tip: the recipe works just like that banana bread excellent for using up too ripe bananas. I always freeze bananas that are too ripe and then use them either for baking or for nice cream.

Ingredients (makes about 15 banana muesli bars):

  • 2 cup of rolled oats
  • 2 cups of grated coconut
  • 1 cup of chopped walnuts, alternatively almonds
  • 3 tbsp linseed meal
  • 5 - 6 tablespoons coconut oil, melted
  • 2 very ripe bananas, crushed
  • 1 tsp cinnamon
  • 1/2 tsp soda
  • 1 pinch of salt
  • Agave syrup for sweetening at will
  • Optional: dark chocolate to decorate

Instructions:

  1. Preheat the oven to 150 ° C top and bottom heat.
  2. Melt the coconut oil in a small saucepan or in the microwave.
  3. In the meantime, mix the dry ingredients in a bowl.
  4. Mix the melted coconut oil well with the dry ingredients.
  5. Finally stir in the mashed bananas.
  6. If you like it sweeter, you can sweeten the dough with 1 or 2 tablespoons of agave syrup.
  7. The dough should not be too fluid, but also not too firm. If necessary, you can add a little more linseed meal or water.
  8. Pour the dough into a deep baking sheet lined with baking paper and bake for about 20 minutes.
  9. When the muesli bars are bakedtoothpick test), let them cool down a bit in the mold. Then you can take them out and cut them into bars.
  10. The muesli bars keep in a cookie jar or storage box for at least 1 week. You can also just freeze the bars in portions.
  11. Optionally, you can also decorate the banana muesli bars with dark chocolate.
